Ricotta is classic Italian cream cheese. The origin is the tasty, mild whey that you get when making cheese. It heats up and thus becomes “Ricotta”, which simply means “re-cooked”. The ricotta is softly full with light acidity. It goes well with pasta dishes, cheesecake, pies, salads, desserts and various varieties of good stir-fries for crostini. In Italy, Ricotta is also eaten as a dessert when mix with sugar, Nutella, berry with sugar, jam, coffee powder with sugar or anything you like.
